Lark Distillery was founded in 1992 with the mission to produce fine Tasmanian single malt whisky in the Scottish tradition using pristine Tasmanian ingredients. Tasmania grows some of the world’s best hard brewing barley, is blessed with abundant pure and soft wilderness water and has a climate very similar to Scotland, so it was an obvious location for Bill Lark’s ambitious enterprise. Nearly 20 years on, Lark single malt has won numerous international awards and is receiving rave reviews in Europe, USA and South-east Asia.

As the first fine spirits distillery in Tasmania since 1839, Lark Distillery has established a reputation as the finest single malt producer in Australia and Bill Lark is considered to be the grandfather of the Australian whisky industry. Demand for distillery tours at Lark has led to the establishment of one, two and four day tours offering unsurpassed access to the science, art and passion of artisan whisky production.


The one day tour takes guests to Lark’s purpose-built distillery in the heart of the Coal River valley, Southern Tasmania’s premier vineyard region. Here the tour guests meet the distillers and enjoy a ‘hands on’ lesson in artisan whisky crafting from mashing-in to oak barrel maturation and every intricate step in between. To ease the intensity of whisky making and tasting guests enjoy a gourmet lunch and wine tasting at nearby Meadowbank winery prior to sampling the new make single malt spirit straight from the beautiful copper pot stills back at the distillery.

After seeing the peat kiln and tasting various maturing fine spirits, tour guests return to the Lark whisky bar on the Hobart docks for further spirit tastings and some fine Tasmanian cheeses. Guests from around the world have given rave reviews of this tour and have established long-standing relationships with Lark through web site sales and return visits.


The two day tour adds a unique and fascinating day in the wilderness to the Lark tour experience. Guests travel into the Derwent River valley then up into the remote central highlands to dig peat on lark’s own peat bog. Lunch at the bog features peat-smoked Tasmanian Ocean Trout and seasonal salads plus Tasmanian wines and Lark whisky and Bush liqueur. On the return trip to Hobart, guests visit the Derwent Valley hop fields and end their day with a well earned drink or two back at Lark’s Whisky Bar.

The four day Single Malt Whisky Experience tour is in essence a whisky-making school fused with a gourmet food indulgence. Each day the guests experience hands-on access to all the whisky making processes and indulge in fine dining at Tasmania’s best restaurants. This tour includes a Whiskies of the World Dinner featuring specially selected antique and hard to find whiskies from around the world matched with Tasmania’s finest produce. Tour guests are also offered a 20 litre barrel of the whisky they have helped produce during their time at Lark: a truly unique tour of a
lifetime for the single malt lover.

Lark Distillery has recently broken new and exciting ground by sending the first ever commercial order of fine spirits from Australia to enter the United States market.
